"Eating or drinking something with vitamin C helps counteract nitrates in deli meats...

Nitrates and nitrites in deli meats are cancer causing agents found in deli meats.  These agents cause a lack of oxygen in the body which can lead to cancer.  When you eat leafy greens with vitamin C it helps to counteract the negative effects in nitrates.

To avoid comsuming nitrates and nitrites buy deli meats that are nitrate-free and nitrite-free.  Boarshead is one brand that has a few types of meat that are nitrate-free.

If you cannot find nitrate-free meats, make sure you drink fresh green juice or fresh vitamin C-filled vegetables with your meats.
